Beans or No Beans in Chili?
Every winter, my Facebook feed is full of my Texas friends arguing over one thing. No, not politics (well, that too) but this: If chili is really chili with beans in it.
You have the no bean camp.
You have the leave-my-chili-with-beans-alone camp.
According to Epicurious, real Texas chili “doesn’t include beans or tomatoes, only beef, homemade chile paste, and a few flavorings. It’s what Texans call a ‘Bowl o’ Red’.”
In a National Geographic article titled “To Bean or Not to Bean: Jumping into the Chili Debate“, they reported that the International Chili Society as of 2012 have allowed beans in recipes for the World Championship Chili Cook-Off.
The Earliest Printed Chili Recipe
Check out the ingredients for the earliest printed chili recipe in 1896 from the Manual for Army Cooks:

Obviously this Instant Pot chili recipe is for those of you who a) don’t mind beans in your chili and b) like it with ground beef instead of beef chuck.
The Perfect Chili Recipe for RVing
What makes this recipe so perfect for RV travel? Well, the hardest part of the recipe is chopping the onions and jalapenos. Plus, it’s all whipped up in the Instant Pot and only dirties up a few dishes and is ready in about 30 minutes.
A note about ground beef grease and RVing:
If you use very lean ground beef, 90%, in this recipe you might not feel the need to drain the grease from the beef. If you use anything less, you’ll want to drain it, but not in your RV sink for obvious reasons.
What I do is drain it into a bowl, let the grease harden and then scrape it into the trash.

Instant Pot Chili Ingredients
Here are the simple and easy to find ingredients in this Instant Pot chili recipe:
- 1 tbsp vegetable oil
- 1 lb. ground beef
- 1 large onion, diced
- 2 jalapenos (one diced, one sliced for topping)
- 1 tbsp chili powder
- 1 tsp salt
- 1 6 oz can tomato paste
- 28 oz can diced tomatoes, not drained (I recommend fire-roasted tomatoes)
- 1 15 oz can black beans, drained and rinsed
- 1/2 cup beef stock
I highly recommend topping this chili with chipotle crema. The tang from the sour cream and the kick from the chipotle is oh so good. Here are the ingredients and how to make it.
Chipotle Crema:
- 4 tbsp sour cream
- pinch of chipotle chili powder
- 1 tsp water
- salt and pepper
Mix the sour cream, pinch of chipotle powder and water together. Season to taste with salt and pepper.
Easy Instant Pot Chili Toppings
For this chili recipe, I like to top it with Monterey jack cheese, chipotle crema and jalapeno slices.
Other popular chili toppings include green onions, cheddar cheese, and diced red onion.
How to Make Instant Pot Chili with Ground Beef and Beans
This recipe is so easy to whip up! The hardest part is chopping the onion and jalapeno.
Here’s how to make it:
- Dice the onion and jalapeno. Slice the second jalapeno and set aside for topping.
- Put Instant Pot on saute setting and add 1 Tbsp vegetable oil. After oil is hot, add ground beef, diced onion, diced jalapeno, chili powder and 1/2 tsp salt. Saute until meat is browned and onions are soft, about 6 to 8 minutes. Drain about half of the grease from the pot.
- Add tomato paste and stir into ground beef mixture, saute another 1 to 2 minutes.
- Add diced tomatoes with liquid from the cans, drained and rinsed black beans, beef stock and another 1/2 tsp salt.
- Set Instant Pot to manual for 15 minutes. Do a quick release after timer goes off.
- While chili is cooking, mix sour cream, chipotle chili powder and water in a small bowl. Add salt and pepper to taste. Set aside for topping chili with.
- Dish up the chili in bowls and top with cheese, jalapeno slices and chipotle crema.
