When we first started RVing, I was very unsure of how I was going to feed my family of five in the tiny RV kitchen I had in our travel trailer. The oven and microwave were very small and the amount of counter space I had was just about non-existent. 

But it didn’t take me long to figure out that a) I could most definitely whip up delicious meals my family would love in our RV and b) that my Instant Pot would become my best friend.

Although I stayed away from the Instant Pot craze for long time, once I got over my uncertainty of using it, I quickly realized what an asset it is to cooking in general, but especially when cooking in an RV. In fact, I like it so much, the Pot is listed in my top 7 RV kitchen essentials. It continues to be one of favorite kitchen tools.

What Makes These Instant Pot Shredded Beef Tacos RV-Friendly?

What is is about this taco recipe that makes it so RV-friendly? Other than the fact that it’s made in the Instant Pot, here are a few other reasons why I love making this on RV trips:

Instant Pot Shredded Beef Taco Ingredients

As I mentioned, this uses minimal ingredients, which is crucial when you’re trying to save space.

The ingredients you’ll need for this RV recipe are:

  • 2-3 pound chuck roast, cut into 2-inch pieces
  • 2 Tbsp cooking oil
  • 1 small onion, diced
  • 3/4 cup beef broth
  • 1 tsp garlic powder
  • 1 Tbsp. chili powder
  • 2 tsp coarse salt
  • 1 tsp cumin
  • 1 tsp oregano
  • black pepper
  • 1 lime

Additional ingredients are:

  • corn tortillas
  • cilantro, roughly chopped (for topping)
  • red onion, diced (for topping)
  • additional limes

How to Make Instant Pot Shredded Beef Tacos

The hardest parts of this recipe are cutting the meat into 2-in chunks and shredding it when it’s done. So, easy peasy. 

Here’s how to make the tacos:

  1. In a  bowl, combine meat chunks and seasonings (garlic powder, chili powder, coarse salt, cumin, and oregano); toss to coat meat thoroughly; set aside
  2. Set Instant Pot to saute and add 2 Tbsp oil. Once the oil is heated, add the diced onion
  3. Saute onions until soft, about 2 to 3 minutes
  4. After onions are sauteed, add seasoned chuck roast chunks* to Instant Pot
  5. Add beef broth
  6. Manually set Instant Pot to 50 minutes
  7. After the timer goes off, do a quick release and transfer beef to a plate or cutting board with a slotted spoon
  8. Shred beef with two forks and return to Instant Pot
  9. Add the juice of one lime to shredded meat and stir
  10. Heat corn tortillas and top tortillas with shredded beef, diced red onions (optional) and cilantro (optional).
  11. Serve with lime slices for additional lime flavor.

*Notes: I have prepared this recipe two ways: by searing the meat in oil in the Instant Pot and by not searing it. In my opinion, taking the extra step to sear the meat did not make a difference. But, if you want to take this step, heat up the oil in the Instant Pot, sear the diced meat, remove the meat, add a bit more oil and then saute the onions. Continue with the rest of the steps.

*While the meat is cooking in the Instant Pot, I take this time to heat up the corn tortillas, dice the red onions, chop the cilantro and get everything set up to serve dinner. 50 minutes might even be enough time for you to tidy up the RV. 🙂

      I wish we could help you out with that, but since we had a 2017 model I don’t think it had the low/high pressure option. It was just “on” as far as we can remember. 🙂
