One member of our family is a vegetarian so I plan meals that can be adapted accordingly. If burgers are on the menu, he gets a veggie patty. Stir fry? I cook meat in a separate cast iron skillet.

For me personally, the more meal prep I can do in advance, the more I enjoy our camping trip. That’s true for everyone else, because if mama ain’t happy…well, you know how the saying goes.

Granola is something you can make ahead then enjoy it for breakfast and as a great snack on the trail.

Here’s another incredible gluten-free granola recipe. Not only is it gluten-free, it’s dairy-free and refined sugar-free. You probably won’t be surprised to hear it’s also vegan.

Despite all those labels, it is full of flavor and an easy breakfast to make. Both of these granola recipes are a great way to have snacks at the ready. Simply scoop a few portions in small Ziploc bags and you have good to-go energy snacks for the trail.

Granola is always a great way to boost your energy level and satisfy your taste buds.

I know for our our next camping trip, when we’re preparing for an outdoor adventure, granola will be part of my make-ahead plans. It will be great to have these snacks prepped before a day of paddle boarding. And even for those tiring RV travel days.

Staying true to our theme of the day, this recipe is gluten-free.

Foil Pack Santa Fe Chicken Ingredients

Prep time is only about 10 minutes (depending on how many of your RV neighbors you’re chatting with at the campfire). It serves 3-4.

  • Chicken breast
  • Black beans, Whole kernel corn, Bell peppers
  • Salsa, Chili powder, Tomatoes, Jalapenos
  • Cheese (Mexican blend or Monterey Jack)

Mix all the ingredients together in a foil pack and toss on the grill. Let it cook for about 20 minutes and you will have one winner of a dinner.

I recommend rounding out this delicious gluten-free meal with tortillas, sour cream, and guacamole or over a bed of cilantro lime rice.

Ok, I know, we already listed a recipe feature sausage. But, how could I resist. I love the ease of foil packet meal when camping. Instead of cabbage, this recipe from 5 Minutes for Mom includes zucchini and other fresh veggies.

Prep time is only about 10 minutes (depending on how many of your RV neighbors you’re chatting with at the campfire). It serves 3-4.

Meal Time Idea

Sometimes we create a type of a meal prep buffet. Place proteins and a variety of chopped vegetables in separate containers on the picnic table. Each person can fill their individual foil packet with whatever they choose, label it, then toss it on the grill. Easy peasy, everyone is happy!

If you’re looking to step away from classic camping food like burgers and hot dogs and whip up something incredible on the grill, kalbi short ribs might be just perfect.

Before you leave on your camping trip, marinate beef short ribs (flanken cut) in a Ziploc bag. Place it in another bag to ensure it’s leak-proof then freeze it. The reason I use a second Ziploc is sometimes frozen chunks create sharp corners and puncture the inner bag. Once frozen, use it as an ice pack en route to your campsite.

Once it’s thawed, toss it on the grill. It’s delicious. We serve it with a simple side dishes of rice, edamame, and cucumbers. Edamame is very simple to cook while camping. Simply steam it for about 3-5 minutes.

Kalbi Short Ribs Ingredients

Factor in the time to marinate the meat. You could do this the night before departure.

  • Flanken short ribs (cut cross-wise)
  • Soy sauce, Green onions, Honey, Sesame Oil, Garlic, Ginger

  1. So disappointed in this post. I was interested for our annual family vacation,but my son and I both have Celiac and neither one of us (like many others) cannot to,erase even gluten free oats and it seemed like about half of the recipes contained oats!

    2. @Gail, there are gluten free oats available! Bob’s Red Mill for example. My husband is celiac and he could not live without oats. So when we found out there are certified GF oats out there, he was thrilled!
